THE Butternut Squash Soup of Your Dreams

Once upon a 2019 Fall season, I went to three different friend's houses for dinner in the same week & they unkowingly all three all cooked the EXACT same Butternut Squash soup. The winner of the unannounced and unrecognized soup contest that noone knew they were entering into that week shall remain nameless. 🤣  (But she did serve it with Naan & her three kids taught me how to cook Naan super quickly in the oven ... so, props to Clarissa and her kids, who quite literally "explained it all.")

BUT THIS SOUP, YALL. It is so good and SO anti-inflammatory! By Friday, I felt like I was floating. A blessing from the Lord, without a doubt.

 

Ingredients

  • 2 cups vegetable stock
  • 4 cloves garlic, peeled & minced
  • 1 carrot, peeled & chopped
  • 1 Green apple, cored & chopped
  • 1 medium butternut squash, peeled, seeded & diced
  • 1 white onion, peeled & chopped
  • dash of sage
  • 1/2 teaspoon salt
  • a pinch (or two) of ground cinnamon & nutmeg 
  • 1/8 teaspoon cayenne (can also add paprika)
  • 1/4 teaspoon freshly-ground black pepper
  • 1/2 cup canned (unsweetened) coconut milk

Optional:

  • Naan
  • Olive Oil

Instructions

  1. Add vegetable stock, garlic, carrot, apple, butternut squash, sage, onion, salt, pepper, cayenne, cinnamon & nutmeg a large stockpot. 
  2. Cook on medium-high until the mixture reaches a simmer. 
  3. Cover, reduce heat to medium-low, simmer for 30 minutes until the veggies are tender and mash easily.
  4. Stir in the coconut milk.
  5. Use an immersion blender to puree the soup until smooth.  (Or transfer soup in two batches into a traditional blender and puree until smooth, being extremely careful not to fill the blender too full with a hot liquid.)  
  6. Taste, and season with additional salt and pepper as needed.
  7. Serve warm, topped with your desired garnishes.

For Naan:

  1. Preheat oven to 375 degrees.
  2. Rub a small amount of olive oil on to the Naan.
  3. Pop Naan into the oven for 5 minutes.
  4. Let it cool, and the taste the glory. The combo of the Naan and the soup is just SO good!
